Paleo Pancakes!

Breakfast:
1/2 cup egg white omelette with 1/2  cup zucchini, butternut squash, onions

1 Paleo pancake with 1 tbs agave nectar (so yum!)
1/2 cup almond flour
1/4 cup egg whites
1/4 cup coconut milk
1/2 tsp baking powder
cinnamon
vanilla extract

I always have 2 mugs of coffee in the AM with about 1/4 cup almond milk in each.
I keep forgetting to write that in this blog.

Almond Flour Paleo Pancake (full recipe):
1 1/2 cups almond meal or flour*
1/2 cup coconut milk
4 eggs
1 teaspoon baking powder
1 teaspoon ground cinnamon
1 teaspoon almond or vanilla extract
Blueberries (or your favorite fresh fruit)**


Lunch: 1 pork tenderloin with 1/2 cup black beans and broccoli

Snack:
*1/4 cup almonds & 1/4 cup blackberries
*1 mug coffee with 1 scoop of vanilla protein (blended creates a yummy latte)
*Paleo veggie sandwich - I cut one almond flour pancake in half, spread 2 tbs hummus on it, & added lettuce and cucumbers! Delicious! 
I made this pancake recipe slightly different:

1/2 cup almond flour
1/4 cup egg whites
1/4 cup almond mild
1/2 tsp baking powder
1/2 tsp baking soda
thyme, garlic, & cilantro















WOD @ 6:30pm
Cross Cuisines  tonight for dinner!
